Saltimbocca alla Romana, Torta di Noci (52-53/2000)

The main course is a personal favourite and it is the first time we make it ourself. Saltimbocca (the name means jump into the mouth) is to my knowledge the only Italian dish with a single recipe that is officially accepted and approved, This happened at a meeting in Venice in 1962 with renowned chefs. The dish is made from veal cutlet with prosciutto fried with butter, white wine and sage. The meat melts in your mouth and can be supplemented with well aged Chianti.
As dessert I offer Pecan cake together with a glass of Moscato D'Asti from La Spinetta.
Hope you have a relaxing Sunday.
