Baked Cod with Vegetables
It's still cold in the ocean close to Sweden and cod is peaking in taste. This dish is simple to prepare. Fry the onion and carrot in some butter, mix with your favorite Mediterranean spices and a can of crushed sweet tomatoes from Italy. In the meantime, you can prepare the cod by squeezing a lemon over the fish and let it suck in. Place the mixture in an ovenproof dish with the fish on top and let it stay in the oven (200 degrees) for about 20 minutes. Very good with mashed potatoes.
