Blueberry Risotto

When I was a little kid, I was helping my parents on the weekends to pick blueberries and cranberries. I specially loved the blue ones and eating them directly. smiley Hot blueberry pie to dessert is a favorite. But can you really have it for a main course? I was therefore very curious to test it in a risotto.

Start by mixing the risotto rice with the butter in a casserole. When it's soaked in you give the rice the same treatment with white wine. Add Blueberry and the vegetable stock step by step. Takes about 40 minutes but well worth the wait. End up by using Parmesan cheese and blueberry as garnishment. A very good dish that is exotic on the plate when you want to surprise your friend / loved one / family.

Now it's soon time to go to the first league match of the season for my favorite football team Malmö FF, Swedish champions in 2010. ( the team is playing in sky blue shirts) Have a nice and active Sunday with hopefully blue skies.
