Winter survival dish! Parmesan Brussels sprouts - Cavolini di Bruxelles alla Parmigiana (92/2000)

Now the true winter has arrived even in southern part of Sweden and we need dishes that are both warm and provide extra supplements of vitamins and minerals. Here's a dish full of these important elements.


1. Take a bag of brussels sprouts and trim them from the outer leaves. Place in a saucepan and boil until they are almost finished (important that they are still quite al dente).

2. When brussels sprouts are ready, place them in a pan with olive oil and heat up while adding the juice of one organic orange and 150 gr Pancetta or equivalent.

3. Once the Pancetta is nicely browned, add salad nut mix and stir a few times.

4. Finish by placing mixture on a plate and add some Parmesan cheese on top.

A lovely winter course that is giving energy to survive until sun is heating up again.
