Would have been to surgery today to make some small repairs to my face, but it was canceled at the last minute. So some substitute with evening blogging instead.
Last weekend we tested our newly purchased Tefal Actifry fryer that you only need a tablespoon of oil for frying an entire kg potato wedges.
Tuscan salad with tabasco rooster
Start by using two smaller bags of pre-cut Tuscan salad in a salad bowl. Add organic chickpeas and hominy along with your favorite olive oil and add rose-pepper dressing. Cut the rooster filet (600 g) into small cubes and mix with a tablespoon of olive oil, one tablespoon white wine vinegar and a half tablespoons Tabasco. Pour the rooster mixture into Tefal ActiFry and let the machine do the work for 20-25 minutes (while watching the TV news). You can of course us the frying pan also but with more olive oil with a little butter and full your attention. Pour the lovely lightly fried rooster in the salad, mix and finish with a little finely grated pecorino. The tastiest salad we've eaten in a long time, and it takes max 30 minutes to do it...
Have long been thinking of purchasing a fryer but the fat increase in the diet has kept me from buying it. Therefore it came as a surprise for me that its now possible to buy a fryer super light. Tefal ActiFry is developed to fry your food using only 1-2 tablespoons oil. You create the base and then the fryer takes care of the rest.
Must admit I had doubts when reading tests that you only nedded to use one tablespoon of olive oil for a kilo of French fries / potato wedges. But to my great surprise, it really worked...
I will return later in the week with a few recipes. Well worth the investment, as the family will get great pleasure from it and also a healthy one. The version I bought withstand 1 kg potatoes, but there is also a family version that manage 1.5 kg.

And I can now announce that the danger is over. Paow will miraculously survive the horrible attack by a Golden Retriever. The end of last week we all where in chock, but it changed and he is now recovering quickly at home. A true happiness for all of us!
My son and his partner have a wonderful pomeranian guy named Paow. Yesterday something happened that made our lives shaken dramatically. Paow was attacked by a Golden Retreiver, who treated our beloved hottie like a cloth. Yesterday evening was completely in tears. I was surprised of my reactions and how much he means to us...
Now our darling is fighting for his life and let us all pray for his recovery, yes he can ...

Finally, a tribute to the Swedish handball team, that won against Denmark today, in the Olympic tournament, making a total effort for reaching the semi. That is the best I've seen our national team in at least 10 years ... Wow!
What a strange summer so far! Luckily I went to both wonderful Champagne and the Mamma Mia Island Skiathos. Filled with new strength I take on the new second half of the year with great joy. Soon I will publish a full report from Champagne with interesting comments from the latest vintages and reportage from both new and recurring contacts. I'm also going to present new great wines in the near future. Hope you finally get a summer worth the name... "I am now back in business, but soon ready for new adventures"!

Writing a blog takes time, sometimes gives very weak echo, but still you continue to write. I have wondered about this phenomenon and why I spend at least one hour per day with blogging and accompanying twitter.
To express your own opinion, share experiences and feelings, gives a lot of energy back even though I and many other bloggers often wonder if anyone actually reads what you write. Of course I can follow the blog statistics which fortunately (in my case) increases.
The happiness of writing is a huge motivator. I sometimes remind me of the euphoria I feel in that moment, when words ends up on the right spot and you feel proud for things you have expressed. Free as a butterfly, I can fly where my mind takes me. With no one else telling me what to do. Therefore, I will blog / tweet /?? as long as I live!
I urge you to get in touch with your favourite bloggers. If only a small word, that means more than you can ever imagine ...
